Avocado Gazpacho

This creamy avocado gazpacho is extremely refreshing! It's something you can easily blend and enjoy for either lunch or dinner. It's also a savory alternative to smoothies. The avocado adds healthy omega-3 fats to this dish and makes this soup filling as well. The spinach adds iron and magnesium, and when eaten with the healthy fats from the avocado your body is also able to absorb all of the nutrients from the spinach more efficiently. The Jalapeno, garlic and ginger add a flavorful spice, and the lime juice really elevates all of the other flavors combined.

Ingredients:

  • 4 Large avocados
  • 1 Garlic clove
  • ½ tsp. Minced ginger
  • ¼ Yellow onion
  • 2 Celery sticks
  • ¼ Cup parsley leaves
  • ¼ Cup packed spinach
  • ¼ Cup lime juice
  • 2 tsp. Himalayan pink sea salt
  • ½ tsp. Black pepper
  • ½ Small jalapeno, optional
  • 1 qt. Vegetable stock, chilled

Instructions: 

  1. Puree all ingredients in a blender.
  2. Add more salt or lime juice according to taste, if needed.

Refreshing Cabbage Slaw


Simply toss together these crunchy veggies with our tangy vinaigrette and enjoy with a protein of your choice for a delicious easy meal. The best part about our refreshing cabbage slaw recipe is that is that it tastes event better the next day! After marinating in all of those yummy vinaigrette juices overnight, the slaw has even more flavor. 

This recipes can be made as a side to enjoy with tacos, grilled chicken or fish, or enjoyed as a salad on its own. We hope you enjoy making this recipe for yourself!


Makes 2-4 servings

Ingredients:

Vinaigrette: 

  • ¼ Cup apple cider vinegar
  • 2 Tbsp. lemon juice
  • 2 tsp. dijon mustard
  • ¾ Cup olive oil
  • ½ tsp. Himalayan pink sea salt
  • ½ tsp. Black pepper

Cabbage Slaw

  • ¼ Head of red cabbage, thinly sliced 
  • ¼ Head of green cabbage, thinly sliced
  • ¼ Small red onion, thinly sliced
  • 2 Carrots, grated
  • 1 Cup Brussels sprouts, finely sliced
  • ¼ Cup parsley leaves
  • Himalayan Pink Salt and Black Peppe, to taste

Instructions: 

  1. In an 8oz mason jar, combine all the vinaigrette ingredients together, screw on lid and shake well. Set aside.
  2. Toss all of the cabbage slaw vegetables together in a mixing bowl with salt and pepper.
  3. Just before serving, give the vinaigrette another good shake.
  4. Pour the vinaigrette over your cabbage slaw and toss to evenly distribute.
