The best part about this Tiramisu Parfait recipe is that you can easily whip this up to enjoy for yourself. Our low glycemic cookies are the perfect healthy dessert option, and when soaked in espresso and layered with coconut whipped cream, you’ll feel like you’re eating real tiramisu!
If you want to make more than one serving to keep in your fridge and have on hand during the week, we recommend you keeping your tiramisu parfait in a mason jar for up to 1-2 days. We hope you enjoy this simple recipe!
Serves 1 Person
1-2 Packages of The Real Coconut Plantain Flour Ginger Molasses Cookies
2 Shots of espresso
Coconut Whipped Cream Layer
1 Can Coconut cream
1 Tbsp Maple syrup
1/2 tsp. Vanilla extract
First, make the cookie layer by soaking the 2 ginger molasses cookies evenly in espresso. Set aside.
Then, mix together in bowl all of the coconut whipped cream ingredients.
Finally, layer your parfait in a small glass or mason jar. The first layer is one of the cookies soaked in espresso. Then add a generous dollop of your coconut whipped cream, and another espresso cookie, and another layer of coconut whipped cream. You can also crumble an additional cookie on top if you’d like as well. Enjoy!
