How To Make Coconut Flour Tortillas
You will need:
- 80g Fine Coconut Flour
- 120g Tapioca
- 4g Xanthin Gum
- 4g Salt
Mix all the dry ingredients together.
Once you've made sure everything is blended well, you can start to add some water.
Start with a thick paste. Keep adding water until your dough starts to form a consistency where you can make a ball. Get your hands in and feel the texture. It takes approx 5 minutes to get to this stage.
Once you have your dough ball, separate in to smaller dough balls, approximately 20g each.
Using a rolling pin, or for best results - a tortilla press, flatten your dough ball in to a tortilla.
TIP: Use plastic sheeting to stop the dough sticking.
Place on a grill plate or directly on to a pan. Cook both sides until golden. It will need a few minutes each side.
